The vineyard is located on a south-west facing hill, in the heart of the Gavi DOCG production area, in a magnificent natural amphitheater. In this area, the sun shines uninterruptedly all day long and its grapes are carefully grown in order to reach the right level of ripeness and yield. From these grapes is crafted their Gavi, produced via special winemaking techniques which favor the extraction of more distinct and delicate aromas. Made of 100 percent Cortese di Gavi, the grapes are cryo-macerated, a process where the juice sits on the skins at an extremely low temperature prior to fermentation, which lasts 24 hours in stainless steel to enhance the fruit and other flavors. Fermentation lasts three weeks before the wine is aged for four months in steel and then in bottle for an additional four to six months. Small in quantity, usually 500 cases are produced. Winemaker Stefano Ricagno notes that the wine is “very rich in perfumes (vanilla and white flowers) and has a big structure between acidity and alcohol.” This wine is ready to drink now but will improve with years of maturation.
Ca' dei Mandorli of Alto Monferrato has produced wine for over two centuries. Father and son today work in synergy in order to find modern and innovative solutions, typical of the new generations, while strongly maintaining the roots and the tradition that characterize this historical winery. Stefano, who represents the fifth generation, has a degree on Viticoltura and Enologia; he is wine passionate and controller of the quality of its products.
