This mono-varietal Fer Servadou, called “Mansois” locally, grows on steep terraces with red clay soils just west of Rodez in Languedoc, on a hillside terrace at 1,000-1,600 feet above sea level. Domaine Laurens, organic and family owned and operated, harvests its Fer Servadou by hand in early October, destemming, pressing, and using the saignée method to craft its deep cherry rosé.
