My clients often ask me how I pair wines with food. For me, it's about the taste, but it's also about the emotional experience. Think of it this way: there are wines that you want to have on an extremely hot day; wines you want to order to impress a date or a colleague (two very different things); wines you would open and drink when you're with your in-laws; wines you want to save for your birthday, engagement, or anniversary; wines with so much sentimental value that you open them when you're with an old friend; wines for when you're looking at the Mediterranean; and wines you want to drink when you're barbecuing in your backyard.

Similarly, there are days when you want a wine that will make you think and reflect, and there are days when you just want a wine that will quench your thirst; there are days when you want to eat a steak topped with foie gras and drink an aggressive Cabernet, and then there are days when all you really want is a simple pizza and some Aglianico. When I'm planning a meal, I think about the experience I want to have and I let that gut feeling be my guide. I match the experience with the wine and the food. In my thinking, the moment is as important as the material.

Today, I'm pleased to bring you wines that reflect a range of potential experiences. There's a charming, easy-drinking, no-fuss white from Friuli, Borgo M Tocai Friulano 2013. It's not going to tax your wallet, your palate or your intellect, and that makes it perfect for a light lunch with friends or watching the sun set over the beach. There's one of the best rosé wines from Italy--Biondi-Santi Rosato Toscana 2010, made by my friend the late, great Franco Biondi-Santi. It's romantic and almost steely, and it's wine that touches the heart and the mind. Finally, there are a trio of big California reds, wines that explode like fireworks; they're sure to make a lasting impression.
