Bond’s ’16 St. Eden reveals the sophisticated, polished side of its vintage, holding its voluptuous lines in a tight, structured fist. Cigar wrapper, savory minerals, underbrush, truffles, and new leather frame this wine’s juicy blackberry, plum and currant fruits. This Cabernet Sauvignon feels taut and muscular as it laces its copious dry extract with fine-grained tannins and vivid acidity. Restrained in its youth, the ’16 St. Eden needs a couple of years in the cellar before you can drink it for decades. Located north of historic Oakville Crossroad at just over 110 feet above sea level, Eden is a north-facing, 11-acre vineyard studded with iron-rich volcanic rocks.
