With roots stretching back to 1070, Castello di Selvole embodies the role that Chianti Classico has had in shaping Tuscan identity. This stone castle was originally built as a defense for the Republic of Siena against that of Florence, and while occasionally battered, this property withstood the 500 years of war between these two principalities. Since 1999, Castello di Selvole has been owned and operated by Guido Busetto and Nobuko Hashimoto, both enologists trained at the Institute of Oenology at the University of Bordeaux. In addition to 23 acres of olive trees, this estate is home to 100 acres of vines, mostly Sangiovese, a winery, and a bed and breakfast. Castello di Selvole crafts four reds, including the Chianti Classico and the Riserva offered today, as well as a lovely Vin Santo.
