The 35-acre Domaine Henri Boillot grows its grapes using sustainable agricultural practices, and Maison Henri Boillot only buys grapes from farmers who do likewise. Both estates produce wines that are world-renowned, sought-after, and deeply satisfying. In fact, Boillot’s entry-level wines sell as rapidly as his Corton Charlemagne or his Monopole Puligny Montrachet Les Moucheres, a 1er Cru that often surpasses or at least rivals Grand Crus in quality. Boillot picks and crushes the white wine grapes at low pressure to avoid bitterness. The must is cooled as quickly as possible to 8 degrees centigrade, and then fermentation takes place 350-liter barrels to retain freshness and minerality.
