Paolo Scavino has earned the reputation for crafting Barolos that are powerful yet graceful. In making the estate’s wines, Enrico Scavino, son of Paolo, along with his daughter, Enrica, use a combination of traditional and modern protocol, including both barrique and casks, very restricted vineyard yields, and extended maceration. First debuted in 1996, the Barolo Carobric is multi-vineyard wine from each of Scavino's esteemed crus: Rocche di Castiglione, Cannubi and Bric dël Fiasc. In its early stages, it is generally shy on the nose yet more demonstrative on the palate.  Floral, spice and earth perfume shoot up with an almost stealthy grace; wild cherries and frutti de bosco explode on the palate; and a tannic finish lingers and then falls gently as sparks. The pyrotechnic, powerful ’07 needs some time in the cellar, but after that, it’ll show its impeccable balance and laser-like focus. Fewer than 1,500 cases are produced with a mere 300 cases making it to the US.
