Deriving from ten acres of gravelly, sandstone-rich vineyards, whole clusters of Pinot Grigio grapes ferment in temperature-controlled steel, and the wine ages on the lees for four months in steel before bottling and resting for three additional months.

Taut, racy, and seductive, this ’07 Extra Brut Champagne bursts from the glass with an explosion of juicy apples and ripe berries with lemon tart, brioche, warm earth, flint, praline, and cream in the background. This Champagne holds its rich fruits in a tight acidic grip, while elegant minerals offer a piercing complement to its persistent mousse--it’s a classic Extra Brut Champagne, and it’s gorgeous! Deriving from the estate’s .75-acre Richebourg parcel that was planted in 1949, the grapes ferment in barrel, and the wine ages for about 15 months in barrique, about 45% new.
