Bright orchard fruits, creamy caramel, toasted nuts, a dash of spices, and a sprinkling of crushed wildflowers comprise the nose of this ’13 Coenobium. As seductive as this wine’s nose may be, its creamy, hefty mouth-feel will make you fall in love, and its streak of acidity will draw you back to the glass. A wine crafted by nuns in Lazio, Monastero Suore’s Cistercensi Coenobium shows the hand of master winemaker Giampiero Bea, the guiding force behind this estate, as well as the estate’s unusual volcanic soils. More unusual than being made by nuns, this white is vinified like a red, so the Trebbiano, Malvasia, and Verdicchio grapes get extended contact with the skins. The resulting wine is unusual, complex, vaguely oxidized and, well, orange.

Amber in the glass this dry wine explodes with scents of honeyed tropical fruit, white flowers and spice, and it coddles the palate with a plethora of mineral-inflected, nutty notes. Balanced, vibrant with acidity, excitingly full-bodied, this ’11 is a delicious, almost feral foray into natural winemaking, and it’s a bottle that’s even more special for being made by Giampiero Bea in concert with a working order of nuns. This skin-contact white, also known as an orange wine, is vinified like a red, so the Trebbiano, Malvasia, and Verdicchio grapes ferment on the lees for about two weeks. The resulting wine is unusual, complex, layered and struck with minerality. Fewer than 350 cases produced each year.
