Produced by Antinori at Castello della Sala in Umbria, Cervaro della Sala is a rare white masterpiece from a historic estate founded in 1385. Crafted from Chardonnay (around 90%) blended with a small touch of Grechetto, it was among Italy’s pioneering whites to undergo malolactic fermentation and barrel aging. The estate’s high-altitude vineyards on fossil-rich clay-limestone soils benefit from significant diurnal temperature shifts, helping to develop both freshness and aromatic depth.
