The 2022 opens with aromas of mango, pineapple, grilled lemon, and smoky mineral notes, layered with toasty nut nuances and a hint of cardamom. On the palate it is full‑bodied and nervy, with bright acidity and savory depth. The mid‑palate carries layered citrus and baked fruit flavors, underpinned by a chalky mineral spine and a long, poised finish.
Castello della Sala is part of the Antinori family’s estate holdings in Umbria, and Cervaro della Sala was created to be a white wine of stature, blending Chardonnay with a small share of the native Grechetto. The wine was among the first in Italy to use malolactic fermentation and oak aging for whites, reflecting Antinori’s ambition to make whites with both texture and longevity. In recent years, the winemaking has leaned toward more refined frames—“slimming down” the style—while preserving the wine’s expressive character.
