This 2019 bottling is drawn exclusively from the “La Côte aux Enfants” vineyard—a steep, 4‑hectare single‑parcel site in Aÿ planted to 100% Pinot Noir. The wine opens with a dark garnet hue and aromatic intensity: dark cherries, blackberries, violet petals, bergamot and hints of forest floor and truffle. On the palate it’s full‑bodied and finely textured, with a chiselled mineral core, fine tannins, and notes of pepper and liquorice that accompany waves of ripe black fruit and subtle oak spice. The finish is long and precise, showcasing the Burgundian‑style vinification and extraordinary site expression.
Established in Aÿ in 1829, Bollinger remains one of Champagne’s last great independent houses. The domaine is recognized for its exceptional commitment to tradition—barrel fermentation, extensive lees ageing, and rigorous vineyard practices—and this ethos extends across its portfolio, including still red wines like those from the appellation Coteaux Champenois. The house manages its own parcels directly, emphasises low yields, and treats each cuvée with the same exacting standards that define its sparkling wines, making every release a statement of craft and place.
