Clear, bright ruby. Fresh and slight aroma to licorice with consistent texture and persistent aroma. Smooth, fresh and persistent. Cubillo is a later-picked site with more clay in the soil and tends to produce the lightest, freshest and most elegant of the López de Heredia reds. Floral, refined and delicately wooded, this is sweet, delicate and almost Pinot Noir-like in terms of its flavors and tannin structure.
Practicing traditional winemaking at its finest, López de Heredia and its winemaking has changed very little since its 1877 founding in Haro, Spain; the same family that founded the estate still owns it, and they adhere to a doctrine blueprinted in the 1880s, still making wine only from their own vineyards, using natural yeasts, long aging in wood, and doing no filtration at bottling. Today, this iconic estate spans about 420 acres, with four major vineyards: Tondonia, the largest and most famous; Bosconia; Cubillo; and Gravano. Whether making white, red or rose Rioja, the estate ferments in large oak vats, ages the wines for extended periods of time in smaller old oak barriques, and takes pains to transmit terroir and typicity. The results are some of the finest wines in Spain-and contenders for the greatest wines on a global scale.
