The 2023 Cervaro is a blend of Chardonnay with a touch of Grechetto, fermented partly in French oak and aged on its lees to build texture. It opens with layers of citrus blossom, white peach, and almond, followed by a creamy yet taut palate with vibrant minerality. The finish is long, saline, and precise—showcasing Cervaro’s hallmark elegance and aging potential. A benchmark Italian white that bridges richness with restraint.
Castello della Sala is one of the most evocative and refined estates under the Antinori family, located in Umbria near Orvieto. This 14th-century castle has become the spiritual and creative home of renowned winemaker Renzo Cotarella, who transformed it into a hub of quiet innovation and thoughtful winemaking. Set among rolling hills between 200–450 meters of elevation, the estate’s fossil-rich limestone and clay soils, paired with a cool, misty microclimate, offer ideal conditions for elegant whites and sweet wines.
