This Blanc de Blancs NV opens with a luminous gold color and a fine, persistent mousse.  Aromatically it reveals white flowers, jasmine, citrus blossom, tart pear, and hints of meringue, underlaid by saline minerality and a chalky core.  On the palate, it is incisive and tense, with a tactile chalky texture, vibrant acidity, almond‑nougat nuances, and a delicate finish with touches of bergamot, iodine, and white pepper.  Scores and critics praise its balance between power, finesse, and mineral drive. 

Champagne Billecart‑Salmon, founded in 1818 and still family‑owned, is renowned for its elegant, refined style and rigorous cellar standards.  Their Les Rendez-Vous series is a limited, terroir-driven line of single-variety, single-village expressions, showcasing Chardonnay or other noble grapes with emphasis on purity, low dosage, and long lees aging.  The No. 6 edition is 100% Chardonnay from Mesnil-sur-Oger (Grand Cru, Côte des Blancs), matured for 82 months on the lees with a dosage of 5.6 g/L.
