The 2019 Domaine Sigalas Assyrtiko offers a radiant spectrum of citrus rind, green apple, saline stone, and driftwood smoke. On the palate, it’s taut and electric—bright acidity, fine texture, and a core of lemon, white peach, and crushed stone, finishing with lingering minerality. This is a textbook Santorini Assyrtiko: fresh now, yet built to evolve gracefully in bottle.

Domaine Sigalas is widely regarded as the benchmark estate in Santorini, helping transform the island’s indigenous Assyrtiko into a wine of international acclaim. Founded in 1991 by Nikos Sigalas—but with familial roots in Santorini farming stretching back generations—the domaine farms volcanic vineyards around the village of Oia, on soils of pumice, ash, and basalt. Their viticultural approach is rigorous: low yields, organic practices, hand harvesting, and careful canopy management to maximize ripeness while preserving acidity. In the cellar, Sigalas uses temperature‑controlled fermentations, native yeasts, and a mix of stainless steel and neutral wood aging, all with minimal intervention, to let the island’s minerality and the purity of Assyrtiko shine through. Over time, Sigalas has also influenced other producers on the island to uplift quality standards and to respect the island’s terroir identity.
