The 2023 Montmains is composed roughly of 40 % Butteaux plus 30 % each of Forêts and Montmains proper, giving a blend of richness and lift. Aromas open with oyster shell, pear, floral notes, and mineral reduction, then deepen to show crisp orchard fruits and chalky stone. On the palate it is full, precise, and mineral-driven, with vibrant acidity, saline energy, and a long zesty finish that balances depth with freshness.
Domaine William Fèvre is a cornerstone in Chablis, owning parcels across many of the region’s top sites (village, premier, and grand cru). They have embraced organic and low-intervention practices over the years to allow vineyard, soil, and vintage to speak more clearly through the wines. In the cellar, Fèvre favors native yeast fermentations, gentle extraction, and minimal new oak (often neutral aging) to preserve clarity and minerality.
