The 2023 Vaulorent is pale yet radiant, with aromas of citrus peel, mirabelle plum, white flower, and a touch of oyster shell minerality—slightly more mineral in tone than its Fourchaume counterpart. On the palate it is precise and tension-filled, with crisp acidity, fine texture, and saline lift carrying flavors of green apple, lime zest, and wet stone into a long, focused finish.
Domaine William Fèvre is one of the leading names in Chablis, with holdings across grand cru, premier cru, and village sites, and a reputation for precision, purity, and consistency. The domaine has progressively adopted organic and low-intervention practices, aiming to showcase vintage and terroir without overworking the wines. In the cellar, Fèvre prefers native yeasts, gentle extraction, and aging in older wood or neutral vessels to preserve freshness and minerality. Their style often emphasizes salinity, tension, and clarity—delivering orchard fruit, flint, and sea spray notes in youth, while allowing complexity to emerge with age. Under the direction of Didier Séguier, the domaine continues to push consistency and expression across its climats, making each bottling a reflection of both vintage nuance and site. Fèvre’s reputation is built on creating wines that offer immediate appeal but also age gracefully over many years.
