The 2021 La Forest opens with a pale straw‑gold hue and a refined bouquet of white‑peach, citrus oil, crushed oyster shell and beeswax, edged by struck‑match minerality and a green‑herbal lift. On the palate it is medium to full‑bodied yet lithe, driven by vibrant acidity and a crystalline mineral spine; flavours of lemon rind, yellow apple and wet stone cascade into a long, clean finish. The mid‑palate reveals subtle nuances of white‑flower, flint and saline brine, while the large‑format 1.5 L adds resonance and ageing depth—this is a wine built for the long haul. While already compelling with decanting, the structure and precision suggest this will evolve elegantly over the next decade or more in the cellar.
Nestled in the heart of Chablis, Domaine René & Vincent Dauvissat is widely revered for its uncompromising devotion to terroir and purity of expression. Their vineyards—primarily on Kimmeridgian limestone soils—are farmed with meticulous care, embracing low yields, hand harvesting, and minimal intervention in the cellar. Fermentation takes place in a mix of stainless steel and old oak barrels, and the wines are aged on lees to build texture without sacrificing clarity. Over decades, the Domaine has achieved canonical status among white‑wine collectors, with each cuvée reflecting the minerality, tension and elegance that define the finest Chablis.
