His focus is not on conforming to typicity or DOC regulations but on translating the truth of Romangia’s land into liquid form. Though they come from different regions and use different grapes, both Quintarelli and Dettori are artisans of terroir, using traditional methods to create wines of purity, place, and profound emotional resonance.
It’s no stretch to say that Dettori’s wines stand shoulder to shoulder with those of Italy’s other great maestros. While names like Valentini, Bea, and Quintarelli have long commanded global recognition and premium price tags, Dettori remains something of a hidden gem—largely because Sardegna, distant from the mainland both geographically and culturally, has yet to fully break into the mainstream fine wine consciousness. But that’s precisely to our benefit—for now.
Tenute Dettori, located in Sardinia’s Romangia region within the Badde Nigolosu cru near Sassari, is a winery deeply rooted in terroir and heritage. Its vineyards, some over a century old, are planted in traditional alberello bush-trained style and dry-farmed in complex calcareous, volcanic–sedimentary soils. Nestled in a natural amphitheater just four kilometers from the sea and sheltered by Mediterranean woodland, the estate benefits from a distinct microclimate and topography that sets it apart. Alessandro Dettori was a pioneer of biodynamic and natural winemaking in Sardinia, leaving the Demeter system to help create a stricter standard for biodynamic certification. His wines undergo wild fermentation in concrete tanks, with no oak influence, no filtration or fining, and minimal to zero sulfur added—typically only at bottling, if at all. The winery itself is built mostly underground with thick, naturally temperature-regulating walls, and vinification is gravity-fed to preserve purity. Dettori works exclusively with indigenous Sardinian varietals—Cannonau (especially the rare Retagliadu Nieddu clone), Vermentino,= Monica, Pascale, and Moscato di Sennori—and bottles each vineyard separately, emphasizing site-specific expression over varietal typicity or denomination. In a further commitment to authenticity, Dettori opts out of DOC classification entirely, choosing instead to label his wines under the Romangia IGT to foreground place above all else.
Dettori Bianco 2021 is a strikingly golden Vermentino from Sardinia’s Romangia region (IGT Bianco), rooted in the Badde Nigolosu cru of Sennori. Crafted from artisanal, ancient vineyards trained in the alberello style and grown in dry, calcareous–volcanic soils. Vinification adheres to Dettori’s natural philosophy: spontaneous fermentation and aging are conducted solely in concrete, with zero added yeasts, additives, or oak aging. The wine is neither filtered nor fined and contains minimal to no added sulfur; the entire process is designed to preserve authenticity and “winery as nature intended” purity.
On the palate, the wine is vibrant and structured. It balances succulent fruit with piercing acidity and a pronounced saline tension, finishing with persistence and a refreshing yet complex profile. There is also a subtle tannic bite—rare for a white wine—giving it depth and a remarkable finish that straddles bitterness, sweetness, and alcohol with poise.
Approximately 9,453 bottles were produced. It's suitable for long-term cellaring, with a potential longevity of 20–25 years.

The grapes are sourced from the Chimbanta vineyard in the Badde Nigolosu cru near Sennori, cultivated using the traditional low-bush albarello method on calcareous-clay soils.
Embracing a natural winemaking philosophy, the Chimbanta 2020 also undergoes spontaneous fermentation with indigenous yeasts and is aged for 18 months in concrete and glass vessels, avoiding oak, fining, filtration, and added sulfur. This approach ensures a wine that is pure, expressive, and deeply connected to its terroir.
Visually, the wine presents a deep ruby red color. On the nose, it offers an aromatic profile rich in ripe red fruits, particularly plum, complemented by herbal notes of myrtle and Mediterranean scrub, along with hints of dried flowers. This wine is produced by Tenute Dettori in the Romangia IGT region, specifically from the Ottomarzo vineyard located in the Badde Nigolosu cru near Sennori. The vineyard employs the traditional low-bush alberello training system, with approximately 5,000 vines per hectare, and follows biodynamic farming principles.
Embracing a natural winemaking philosophy, the Ottomarzo 2020 undergoes spontaneous fermentation in concrete vats without the addition of yeasts, additives, or sulfites. The wine is aged for 18 months in concrete and glass vessels, avoiding oak to preserve the purity of the fruit. It is bottled unfiltered and unfined, ensuring an authentic expression of its terroir .
Visually, the Ottomarzo 2020 presents a deep ruby red color.
